Simone Says: The Pool Menu is “Kale”ing Me!

As I sat by the pool skimming through a Cosmo magazine earlier today, an article with the title “How to Eat When Your Workout Makes You Snacky” caught my attention. It talked about how those who workout may not lose the pounds as quickly as they want because they say things like “I worked out so it’s okay to eat a cheeseburger”. What really caught my attention was when the article said: “We tend to overestimate the calories we burn”.

You might be reading this blog post and think that I worked out today, but no, I didn’t. I took this Cosmo article to heart, though, because I really do overestimate the number of calories I actually burned – I usually get home from the gym and have a cold slice of pizza or some leftovers from the night before, thinking that I can eat it and still say that I lost a few hundred calories. But like, at least I don’t have a cheeseburger after my workout.


Even though I didn’t get the chance to hit the treadmill, doesn’t mean I didn’t have a bomb lunch. I got to order the kale salad, which included crisp kale, roasted peaches, dried cranberries, shredded manchego cheese, and white balsamic vinaigrette. Here’s a snap of it…

I ended up taking a solid five minutes after I got the salad to take plenty of pictures. The salad looked so good and I couldn’t just let this lunch go undocumented. Even my dad commented on the number of pictures I actually need of a salad, and I explained to him that it was also for the Snapchat story, so I can share it with my friends!



I also had an iced coffee (I kept it healthy – skim milk instead of cream, and sweetener instead of real sugar), and then I had another one because you could never really have enough coffee. I don’t really remember if it was decaf or not, but I sure hope I can fall asleep tonight.


As this weekend is coming to a close, I would like to thank those who contributed to these past few days of amazing eats: the chefs at The Smith, and those who chopped up the peaches in my kale salad that really added that special touch to the whole masterpiece.
