After a terribly long winter, with March feeling like a year itself, it’s nice to get a glimpse into a bright summer ahead. And when I say glimpse, I mean the one day in April where the sun pops out as opposed to strong ocean winds and rainstorms daily. Spending my quarantine down the Jersey Shore is nothing short of great, however. Though I’m not taking long walks on the beach quite yet, I’m still enjoying the occasional sunshine with 5 o’clock cocktails and spending quality time in the kitchen creating something new. Instead of focusing on eggs like in my previous post, here’s everything I’ve been concocting with what we have left in the fridge.
Cinnamon apple oat protein balls! I shredded apples and mixed them with rolled oats, cinnamon and a splash of vanilla. Good for a snack between online classes or for an early-morning walk outside if I’m not ready for breakfast.
Banana Bites! A simple snack of banana slices with organic crunchy almond butter slathered in the middle. I ate these bites with my egg-white scramble breakfast with berries, but these are also a great snack for any time of the day, even dessert at night.
Continuing on the breakfast/brunch/morning food theme, I made this wholewheat blueberry and chocolate chip pancake board. I was inspired by other “brunch boards” online (waffle boards, fruit boards, etc.) and thought I’d make it my own. It was my first time making pancakes, so I was sure to flip each one carefully. It was the perfect amount for me and my parents and a great way to start the day.
On the days when I don’t want to spend an hour flipping pancakes, I’ll make a pot of The Bunnery’s OSM (oat, sunflower seeds, millet) oatmeal. My family loves Jackson Hole, the home of The Bunnery, so naturally, we get their oatmeal shipped to New Jersey for year-round enjoyment. With a load of berries on top of my oatmeal, nothing could go wrong.
Moving into snack time, I had an avocado that was too ripe to wait until the next day to make avocado toast. So I grabbed a lime and tomatoes and went crazy. Presenting my first ever batch of homemade guacamole!
As for dinner, just last night we had fantastic custom bowls where everyone can throw in whatever they’d like. Contents included ground turkey with sesame sauce, fresh veggies (spinach, peppers, etc.) on top of brown rice. A great ratio of protein to starch to veggies and flavor. 10/10 in my books!
My end of my sophomore spring semester is quickly approaching, so though I’ll be hitting the books to study for finals soon, I look forward to cooking and sautéing and flipping as soon as classes let out. As for the summer, I was supposed to move out to beautiful Benton Harbor, Michigan to live out my sales intern dreams, but instead I’ll be doing that work virtually and spending the summer down the shore. Nothing to complain about here. I’m looking forward to eating healthy and finishing the school year off on a high note
